Allow for customer creation with less required information ideally just Name and Email, so we can still maintain history of POS orders for non-members as well as track industry partners and add to our mailing list based on customers in the Tasting Room.

Today the required fields are also a blocker to correcting any information a customer entered at checkout for their name and email address, when we go in to edit this info the required fields block us from only correcting this info.
